Signature Meals: Nopa Porchetta

Each Tuesday at Nopa, a wonderful tradition ensues – porchetta. Porchetta is the belly of the pig, unraveled. A garlic and herb schmear are the foundation, then a loin is placed inside of the pork belly, then rolled up and tied with twine. The result is a crispy, fatty  pork extravaganza.
