“In designing the menu for The Progress, we think about the savory food and what it’s like. And how you feel after you eat your six-dish menu and what you want to have for dessert,” says partner and pastry chef Nicole Krasinski. The result: an airy and savory floating island made from meringue and served atop traditional lemon curd and olive oil, garnished with candied Buddha’s hand and anise seed.
