In part two of four in our “Chasing the Negroni” cocktail feature, an old Nopa cocktail is revived for this Spiritual. Bonal and Gran Classico, represent the vermouth and Campari elements, respectively, offering a more cola-like hue and flavor. The Gran Classico is an Italian aperitif, a blend of 25 different herbs and roots. It is sweet, but not sticky, herbal and steeped with orange flavor and aroma. Bonal is quinine-based, a medicinal extraction from the cinchona plat discovered by the indigenous people of Peru and Bolivia. Like so many iconic libations, we have the herbs of the Chartreuse Mountains to thank for the unique complexity.
