The Monarch: Chapter 1: Frapin VSOP
This weeks furious cognac posts have finally led us to a sequential exploration of the French Trinity. The first, The Monarch, feels like an instant classic, and one that gives us insight into Yanni’s palate and philosophy. With only three ingredients, The Monarch is simple. Cognac, Armagnac and Calvados. For our purposes, this is the Trinity. Cognac and Armagnac are named after their respective places of origin. While these spirits have a proud tradition in France, Americans are largely uninformed on these brandies.

Commence Spirit Week!
Welcome to Spirit Week! But not like the high school Homecoming shenanigans. At Nopa, we show our spirit with spirits! And to be exact, Spirituals. This will be an intense week, with 7 straight days of exams! That is to say, an examination of our current Spiritual, French Trinity.
Not to oversell it, but the Spiritual, in both concept and practice, is a unique and important part of our restaurant....
